Overview
Egyptian food is street food. The best koshary in Cairo comes out of a counter that has been serving one dish for sixty years, not from a hotel buffet. This walk takes you to the places locals actually queue for. You will try koshary, the national dish of rice, lentils, pasta and fried onion; taameya, the Egyptian fava bean falafel that is greener and softer than the Levantine version; hawawshi, spiced minced meat baked inside bread; and finish with tea or sugarcane juice.
